Happy Halloween! Today I thought I’d round up some of my favorite scary good meal prep recipes from around the web!
Some of these recipes are intended to be meal prep recipes, and some of them yield enough portions for a family, so I just divide them up for myself for lunches and add a side. Most of them are fairly simple recipes which makes it easy to quickly whip up a week’s worth of meals on a weekend.
Breakfast
Baked Blueberry Oatmeal Cups from Kirbie’s Cravings
I typically will have eggs and fruit for breakfast, which I do not prepare in advance. Occasionally when I know I’m going to have a busy week where I won’t have time to cook in the morning I’ll make these for a healthy breakfast on the go.
Lunch & Dinner
Greek Chicken Meal Prep Bowls from Easy Peazy Mealz
This is probably the most intensive meal prep recipe I’ve ever made, but it could be because I’m not used to making my own tzatziki sauce. To save time you can always make this a bit simpler by using store bought tzatziki or substituting the rice for pita bread and using chopped cucumbers rather than making a cucumber salad.
Easy Zucchini Lasagna by iSaveA2Z
This is another recipe that requires a little (but not too much) effort. I found the hardest part is slicing the zucchini. If you have a mandolin slicer that will help, I had to do it with a knife. I also found that I needed more zucchini than the 2 called for in the recipe. You could buy a couple extra zucchini to be safe and sautee what you don’t use as a side for dinner one night. You can also make up side salads to eat with the lasagna. Lasagna’s great for meal prep because it’s something you can freeze for a dinner or easily divide up for a week of lunches.
Butternut Squash Quesadillas with Kale and Chicken by Ahead of Thyme
This one took quite a bit of time, but it doesn’t have to! Please make your life easier and buy butternut squash that is already peeled and roughly chopped. You will thank me later. I found these very filling, but you could add a side salad if you wanted more than a quesadilla. I was craving some fall flavors when I made this, and it definitely hit the spot. So delicious!
Spinach, Bacon, Cheese Quiche with Sweet Potato Crust by Recipe Runner
While this is technically a breakfast recipe, I find that every so often I get sick of the things I am eating for lunch and need a shake-up. Quiche and salad make a really great lunch, and I love this recipe because of the healthier sweet potato crust. For a side salad, I would recommend something with pears, walnuts, goat cheese, and carmelized onions (tip: use sweet onions).
Copycat Panera Bread Strawberry Poppyseed Salad by Make the Best of Everything
This is the perfect lunch for spring and summer! While the recipe uses rotisserie chicken, I will typically marinate sautee my own chicken and use store-bought Panera dressing instead of making my own. Whether you decide to use store-bought or follow the recipe to make your own dressing, just be careful of how much you are using since it does have added sugar.
Sheet Pan Sesame Chicken and Veggies by Make Yourself Skinny
Healthy, easy to make, and delicious! What more could you ask for? I like to double-up the recipe for the sauce, but that’s just my personal preference. While you could serve this over quinoa or brown rice, I like to have it on its own with a side salad (if you couldn’t tell by now I’m a big fan of side salads).
Healthy Spinach and Artichoke Bake by The Schmidty Wife
Another easy and delicious recipe. I think anyone who likes spinach artichoke dips will love this because it’s basically like having a spinach artichoke dip over chicken. Make sure you read over the note below the recipe on portion sizes before you pick up the ingredients. I like to serve this with, you guessed it, a side salad.
Buffalo Chicken Lettuce Wraps by Sugar Dish Me
While I realize that buffalo sauce isn’t the healthiest thing in the world, I am obsessed with it and I need my fix. I love these because they are so easy to make and they satisfy my buffalo-sauce-craving needs. I will usually substitute in whole wheat panko bread crumbs, skip the quinoa (I don’t think you need it), and skip the dressing/scallion garnish. Yum!
Turkey Taco Salad Meal Prep from Damn Delicious
I love taco salads and burrito bowls for meal prep because there’s so many ways to mix it up (that and I just love Mexican food). You could add in cauliflower rice, corn, beans (just watch the sodium content), bell pepper, and/or substitute in queso blanco for the Mexican blend cheese. When working with ground turkey, just watch the sodium content in the premade spice mixes. You could also try making your own spice mix.
